Sourced by Project Origin, Lot M 27 comes from Finca Himalaya in Apaneca, El Salvador. Produced by Mauricio Salaverria, the Bourbon and Pacas varieties are grown at 1,500 metres and processed using the Supersonic Supernatural method. Expect raspberry, strawberry and blackcurrant, followed by ripe apricot and a soft cacao finish. Juicy, winey and sweet, the cup remains beautifully clean and balanced.
